Spice Cake

Spice Cake
Place in a bowl and cover; let sit 20 minutes:
2/3 cup oatmeal
2/3 cup boiling water
1/4 cup butter
Add:
1/2 cup sugar
1/2 cup brown sugar
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. salt
1 egg
3/4 cup flour
Mix together well.  Bake in greased 8-inch pan at 375° for 35 minutes. When you double the recipe (9 x 13 inch pan), cook at 375° for about 30 minutes. Can frost with the broiled spice cake frosting or other topping. I used the Coconut Broiled Icing on this version.

Spice Cake Frosting
2 Tb. milk
3 Tb. butter
1/2 cup sugar (white or brown)
1/2 cup coconut
1/2 cup nuts
Bring to a boil. Pour on hot cake. Place under broiler until brown and bubbly.

Coconut Broiled Icing
3 Tb. butter or margarine
2/3 cup brown sugar
4 to 5 Tb. canned milk or milk
1 cup coconut
1/2 cup chopped nuts
Mix. Spread on warm cake. Broil for 1 minute. This is a quick version of the traditional coconut frosting for a German chocolate cake.

  1. This looks good! I've never made a scratch spice cake. Sometimes I jazz up the spice cake mix by adding a can of pumpkin pie filling. I know, so impressive!
