Honey Chicken Pieces

Here's a great chicken recipe for a sweet, flavorful chicken.  Basically it's like an instant marinade--flavor the chicken as you cook.

Honey Chicken Pieces

(1) Sprinkle chicken pieces with seasoned salt and pepper.

(2) Brown chicken in oil in frying pan.

(3) In a mixing bowl, stir together:
1/3 cup dark Karo Syrup or honey
2 Tb. lemon juice
Salt
Pepper
¼ tsp. oregano, crushed
½ cup water
(4) Pour over chicken in the frying pan. Turn down heat and simmer for 20 to 30 minutes, stirring occasionally. Baste with sauce until chicken is done and tender. Taste, and adjust salt and pepper if necessary. Turn meat occasionally.

This recipe is from Eliza's friend Kathryn.

Tiffany's Note: This recipe from the family cookbook has always sounded good--I finally got a chance to try it!  I used honey and worried that we'd have bland looking chicken.  But, after the chicken browned and the sauce reduced the chicken took on a lovely golden color.

We used it to top a salad, but it would also be good served plain or on a bun.  I used about a pound or two of chicken tenders.
