Fish with Dill

An incredibly simple recipe!

Fish with Dill

Heat oven to 350°. Melt 3 Tb. butter in small baking dish. Place 1 lb. orange roughy or other mild fish filets in melted butter and turn to coat. Sprinkle with dill weed, salt and pepper. Bake for 15 to 20 minutes or until the fish flakes easily with a fork.

Becky's Note: This recipe is so simple.  Many times I think I fall into the trap that good food is complicated food.  This recipe reminds me that some of the best foods have minimal ingredients and preparation.

  1. What kind of fish do you use? I haven't seen orange roughy in the stores for years since the species became scarce from overfishing.

    Some people use tilapia, but it's too fishy for my tastes. Flounder works as far as the taste, but it's so thin that it often falls apart in recipes like this.

    Any suggestions?

    1. Halibut is pretty mild. I also like cod and haddock, since I can't get great lakes white fish here in Arizona.

  2. I use tilapia- I get it from our local Costco and it seems to be fairly mild and inexpensive. After I loaded this picture, I realized that you can't actually see any of the spice! I think they are all on the other side of the fillet!!
