Broccoli Salad

This simple salad is a big hit at luncheons, and it's so easy to make, you will have plenty of time to spend on the other things you have to do! All the prep work can be done hours ahead of time, or even the day before you need the salad.

Broccoli Salad
4 cups broccoli, cut into bite-size pieces
1/2 cup sunflower seeds
1/2 cup dried cranberries
1/2-1 cup finely chopped red onion
Stir together, and refrigerate until ready to eat. Then add dressing:
1/2 cup mayonnaise
3 Tb sugar
1 Tb. white vinegar
Mix dressing and stir into the salad just before serving. Serves 6. This is really good at a luncheon. Tastes good the next day.

Melinda's Notes: Somewhere along the lines the proportions were mixed up. I cut the recipe in half from 8 cups broccoli to 4 cups but didn't cut the dressing. These are now the correct proportions.
