Banana Pancakes--what are banana pancakes?

Occasionally when my mom would make pancakes she would slice up a banana or two into the batter and bake them on the griddle as usual.  I love them!  I've tried them on my kiddos a few times with mixed results.  Maybe it's an acquired taste--but I think they're yummy.

To make banana pancakes mix up a basic pancake recipe like our simple Pancake recipe posted earlier.  Then, add a mashed banana to the pancake batter or thinly slice bananas into the batter.  {I like the thinly sliced bananas.} Cook as usual on your griddle.

A dash of vanilla and/or cinnamon makes these even better.

  1. I grew up on a ranch that was part orchard test grounds for Luther Burbank. I love pear pancakes same way, apple pancakes same way, almost any fruit can be dropped in or sliced into before you flip and makes an awesome breakfast. I think my favorite is pear. It is not quite as sweet as a banana gets when it cooks. Thanks for sharing and reminding me of the days of old. Last ones I made were in Michigan last fall.

    1. Susi--pear! What a yummy idea! I knew you could do other fruits but hadn't ever thought of pear. :)

      We'll need to get cooking through all of the pancake variations in our cookbook--blueberry, chocolate, pumpkin, etc. :)
